For the past several months we have instituted a new Friday night ritual which includes going to dinner at The Roost followed by a family movie event downstairs in our new home theater. This weekend we changed it up a bit because Ryan had a friend in from out of town and they were golfing past our normal dinner time so I grilled out for everyone and decided I would test out our new popcorn machine that I was able to buy with my winnings from our Indy 500 office pool – yeah me! Unfortunately, I didn’t have any luck with the new popcorn machine but I had my heart set on making caramel popcorn so I decided to go the old fashioned route of popping corn on the stove top.

It turned out pretty good for the first go, but I did learn to use less oil than a traditional popcorn recipe calls for as you can taste it a bit in the caramel corn. It is definitely something I will try again soon (maybe yet this week if I get some extra time). Below is the recipe I used thanks to Miss Paula Dean…love that lady!

Caramel Popcorn

1 cup butter
2 cups packed brown sugar
1 teaspoon salt
1/2 cup light corn syrup
1 teaspoon baking soda
8 quarts popped popcorn

Preheat oven to 200 degrees F.

Over medium heat, combine the first four ingredients and boil for 5 minutes.

Remove from heat and stir in baking soda, stirring well.

Pour the mixture over the popped corn and stir well to coat.

Spread popcorn in a large roaster or pan and cook in the over for 1 hour, stirring every 15 minutes.

Spread out on waxed paper to dry.


I also snuck in a little gardening to add a punch of color to my front porch…I never seem to have enough flowers planted…it is an addiction!
